Pea soup recipe

Bowl of pea soup
Ingredients
8-10 servings
- Peas - 725g petits pois
- Onions - 4 large or 6 medium
- Oil - 4 tablespoons
- Bacon (Optional) - 300g smoked back rashers
- Water - 1.5 litres
- Bouillon - 4 teaspoons
- Fresh mint - a sprig
- Salt & Pepper - to taste
- Sour Cream - to serve
Directions
- Dice the 4 large onions (1cm squares is fine)
- Heat the oil in a large (4+ litre) pot, add the diced onions and saute until soft, but do not brown
- Add all the peas, and then add the water together with the bouillon and mint leaves
- Bring to the boil, and then simmer for 5 mins
- (Optional) While things are simmering, finely dice the bacon, and add it in and
- Simmer for a further 10 mins
- Add salt and pepper to taste
- Blend (in batches) in a food blender, or in the pan with a hand blender
- Serve in bowls with a dollop of sour cream
